The wine list at Cabotto’s is ever-expanding and ever-changing, just like the menu. A particular strength of the wine list is the classic regions of Italy. In Italy, wine is produced in every corner of the peninsula, and Cabotto’s showcases the specialties and peculiarities in many of these regions. Cabotto’s has wines that are available through the LCBO stores as well as many titles that have been purchased from wine importing agencies. The ever-growing collection of bottles in the cellar represents an attempt to provide guests with a balanced selection of a variety of truly exceptional wines. Many of the producers in the collection are widely recognized as leaders in the wine producing world, while others are the result of a continuing effort to find small, quality-conscious producers of outstanding wines. All of the bottles are stored in cellars that are temperature and humidity controlled ensuring the best quality and flavor. Guests are encouraged to ask the knowledgeable staff for a recommendation or more information about a particular bottle. While it is now widely recognized that there need not be strict formalities to the pairing of wines and food, it nevertheless remains true that the skillful pairing of the two is an experience almost without comparison. 2004 Cabernet Sauvignon, Maculan- Veneto, Italy
This Cabernet has lots of earthy aromas with green stem and cedar on the nose. Flavours of sweet vanilla oak.

2006 Valpolicella Ripasso Classico Superiore “Monile”, Salvalai- Veneto, Italy

A stellar wine from a superb vintage. It has lingering fruit characters and soft tannins. Italy’s answer to Shiraz and Zinfandel.

2005 Barbera d’Alba, Gagliardo

This wine is medium-bodied with red fruit and plum flavours and lightly roasted coffee aromas. Smooth.

2006 Shiraz, Kingston Estate- SA, Australia
This classic styled Shiraz has plum, dark berry and cracked pepper flavours, with subtle vanilla characters.

2005 Shiraz “Bremerview”, Bleasdale- Langhorne Creek, Australia
Rated “best value” Shiraz in the world by Wine Enthusiast. Full-bodied and intense.

1997 Bourgogne Pinot Noir, Remoissenet- Burgundy, France
Great Vintage. The blackberry and spicy oak flavours are wonderfully integrated. Very smooth and beautifully refined.

2005 Merlot, Butterfield- California, USA
Ripe plum and cherry fruit with rich oak and corners of cedar. Great mouth feel.

2004 Cabernet Sauvignon “R”Collection, Raymond- Napa Valley, USA
Great value from Napa Valley. Medium to full bodied with firm tannins and good acidity, the intensity reveals itself on the palate.

2007 Pinot Grigio, Salvalai- Venezie, Italy
Full flavoured, fruit first, juicy Pinot Grigio with a refreshing grapefruit tang on the finish.

2005 Bianco d’Alcamo “Carta d’Oro”, Cantine Rallo- Sicily, Italy
Made from 100% catarratto grapes with a flowery nose that is fresh and delicate. This wine is fruity and well balanced.

2007 Tocai Friulano, La Tunella- Friuli, Italy
Aromas are fruity, with a hint of bitter almond, pear and wild flowers; the wine is mellow and velvety.

2004 Gavi, Pio Cesare- Piedmont, Italy
Fresh, with lime fruit and stony minerals on the nose. Some confected fruit notes on the palate, with crisp acidity. Clean, fairly neutral with a short finish.

2006 Chardonnay, Butterfield Station- California, USA
Fruit forward with apple tones and soft peach with a taste of butter rum touched by mellow, vanilla toasted oak.

2007 Sauvignon Blanc, Grove Mill- Marlborough, New Zealand
4 Stars Decanter. Wines from Grove Mill are very distinctive; rich, full flavoured, complex, elegant, well balanced and excellent partners for fine cuisine.
